The type of sacrifice described now is the sacrifice of well-being. It is similar to the burnt offering in that the sacrifice must be an animal, but only the fat of the animal is to be burnt, because “All fat is the Lord’s” (the rest of the animal is to be eaten, but that is only mentioned in a later chapter). More generally, Israelites are commanded never to eat fat or drink blood.
This and chapter 1 goes into pretty gory detail of how to extract various body parts for the sacrifice; in the short text of this chapter alone, the word “entrails” appears seven times.
You shall offer from the sacrifice of well-being, as an offering by fire to the Lord, the fat that covers the entrails and all the fat that is around the entrails;
